
Ingredients
Wet
- 1/3 cup vegetable oil *
- ½ cup coconut sugar
- ½ cup brown sugar
- ¼ cup plant-based milk
- 14 ounces pumpkin pure
- 1 teaspoon organic vanilla extract
Dry
- 1 ½ cup all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- ¼ teaspoon nutmeg
- ½ teaspoon ground ginger
- ¼ teaspoon salt
- ½ cup vegan chocolate chips
Instructions
- Preheat oven to 350 degrees
- In a large bowl, whisk all oils, sugars and vanilla together
- Add pumpkin puree and milk and mix
- Add all dry ingredients except chocolate chips and mix
- Fold in chocolate chips
- Put into lined muffin tin
- Bake for 25 minutes
- Let cool
*Cannabis-infused option: depending on potency, mix the standard vegetable oil with infused oil for a total of 1/3cup. Infused oil should be liquid to blend with coconut oil and then add additional wet ingredients before following rest of recipe.
